Event Description
Chef Katie Porter and Chef Hans Walsh are teaming up for a special Corn Dinner. All 3 courses of the farm-to-table menu feature dishes made from corn grown in last year’s Henry A. Wallace Historic Corn Plot, then hand-shelled and ground into corn meal and corn flour by Early Morning Harvest in Panora. All of the other produce on the menu comes from the Wallace Farm, and other ingredients are sourced from Iowa farmers.
“What could be more Iowan than a dinner focused on corn?” asked Deb Houghtaling, President & CEO of the Wallace Centers of Iowa. “This is a fun way to celebrate last year’s inaugural historic corn plot and Henry A. Wallace’s impact on agriculture.”
The Henry A. Wallace Historic Corn Plot includes 5 varieties of open-pollinated and hybrid corn that revolutionized agriculture. The plot is sponsored by Corteva Agriscience, founded by Henry A. Wallace in 1926 as Hi-Bred Corn Company and later known as Pioneer Hi-Bred. The full menu includes:

The Corn Dinner begins at 6 pm, but guests are invited to arrive early to explore the Wallace Farm. Visitors can walk through the production garden, see the new Prairie Art Exhibit along the one-mile grassy path, and stop in the gift shop. Staff will be on hand at the corn plot beginning at 5:30 pm to answer questions. A short program during dinner will share the corn plot story and its journey to the plate.
